Sweet and Spicy Sriracha Chicken

    This sauce is pretty good! I love sriracha and that slight after burn that you experience when you eat it. I made this for my family for dinner tonight and we agreed that it was a nice and healthy alternative to ordering Chinese take-out.


Sweet and Spicy Sriracha Chicken
Ingredients:
- 4 chicken breasts, cut into chunks
- 1/3 cup of cornstarch plus 2 tablespoons, divided
- 1 cup plus 2 tablespoons of water, divided
- 2 tablespoons of sriracha hot sauce
- 1/3 cup of soy sauce
- 1 tablespoon of minced garlic
- 1/4 cup of sugar
- 2 tablespoons of honey
- olive oil
    Combined the 1 cup of water, sriracha, soy sauce, garlic, sugar, and honey in a small sauce pan. Bring to a boil. In a separate bowl, whisk together 2 tablespoons of cornstarch with 2 tablespoons of water. Add the cornstarch mixture to the boiling sauce mixture. Turn down the heat and whisk until sauce thickens. Add the chicken and 1/3 cup of cornstarch to a gallon Ziploc bag and shake to coat. Drizzle olive oil in a large skillet over medium heat and add chicken. Saute until golden brown and chicken has cooked all the way through. Toss the chicken in the sauce and serve over rice.
